燕窝是雨燕科动物金丝燕及多种同属燕类用唾液和绒羽等凝结所筑的巢窝，燕窝不是直接采摘下来就能吃的，是需要经深加工后可供人食用的部分。燕窝的加工比较费工，需要工人先把原燕窝表面的燕毛挑掉，然后再泡发，第二次挑拣燕毛，最后用模具成型。
